Mmm love me some blackberries.


My roomates were quite shocked to find me cooking myself breakfast this morning, but just realized I dropped the ball because I didn't bring my lunch.

Baby steps, people.

Being a GAW is the best




Tilapia filet with mango, avocado, and cilantro
{I got lazy and didn't make the salsa, but still delicious!}



Shopping List:

blackberries
grapefruit

mushroom
red pepper

brussel sprouts

pork butt/shoulder
chicken breast

Prep

wash and cut tomatoe, onion, pepper, mushroom, jicama, cilantro, mushroom, chicken
cook turkey sausage, half with taco seasoning
place chicken, onion, pepper, mushroom on kebabs and grill
grill half of chicken breast
grill salmon
grill tilapia
boil 2 eggs

Meals

Crustless quiches
Chicken kebabs
Pulled pork lettuce wraps (making this tonight!)
Tilapia with cilantro mango salsa
Tuna salad with almond thins
Guacamole with almond thins
mushroom/tomatoe/avocado
Ants on a log (banana with almond butter and raisins)
pomegranit acai juice
Grilled Chicken Salad
Taco salad 
Brussel sprouts, roasted with garlic and drizzled with balsalmic
Spaghetti squash with meat sauce
Salmond with asparagus

Crustless Quiches

Growing up, I refused to eat quiche. I didn't like scrambled eggs, or sausage.
Good thing tastebugs change, because these are delicious and paleo-friendly!


- cook sausages/peppers/onions in a skillet
- divide evenly in muffin pan                     
- beat 8 eggs and pour evenly pour in each
- bake until eggs are cooked (15 minutes) 





Just for kicks, and to use my favorite bowls...
walnuts and blueberries for desert.

Summer Treat




Slice a couple bananas, freeze, throw in a food processor, blend to whipped consistency, add other ingredients!


I added almond butter, cocoa, and cinnamon. YUM!


Wednesday

I cannot cook in a dirty kitchen

 I am not usually a clean freak about the kitchen, but for some reason when I cook, the kitchen has to be clean. I clean before, and I clean during. I throw away my trash, wipe off the counter, and put away each ingredient before adding the next.
 
This little OCD girl branched out from her taco meat last night, and made crab cakes from a receipe I found on Every Day Paleo ! I made enough to have lunch and dinner for the next three days... maybe I am still a child and eating the same food for every meal...
These, however, I will not be eating for every meal because the recipe only made 11,
4 of which I ate last night...

30 Days

Whelp here we go. I wish I had a before shot, but this is the skirt I cut from a dress. Just imagine this bottom with a really ugly royal blue top. PS this is my room, I threw everything to the side so it would look semi clean.It's July 1st, which means I've done Paleo for a month, and therefore am letting myself have a piece of the chocolate by my desk. Except, for the first time, after having it I did not crave more, but rather felt the effect on my body. I was a little worried I would just go crazy if I rewarded myself even a little, but if anything it has encouraged me to stick with it another month.
I start crossfit July 11th...I know it has taken me about a month to actually start from when I was planning, but no more excuses. Elements is 7/11, 7/13, and 7/15 and then I'll either start Endurance or the normal CrossFit classes.
One of my co-workers just walked by and asked me if I got a hair cut, but I made a comment like "no I just never fix my hair like this"...when in reality I did in fact give myself a haircut, and it was probably not the smartest idea I've ever had. Everyone was saying that when you are growing your hair out, you have to be sure to cut off the split ends...so I did. Literally I did the cutting. So rather than worrying about if my hair is straight or even, I know that is it healthy...aaaaaand I know that my mom will fix it this weekend. And hopefully take me to Sam's.

Paleo and Proof



Proof I actually wore this outfit, and a sweet shot of my gnarly leg.

I wanted to grill again - I've been trying to use less seasonings, so grilling is fun because it kind of provides a flavor of its own. The grill is at my sister's house, so rather than fighting traffic to get food from my house, I stopped by Whole Foods...I was pleasantly surpised that two shrimp scewers and a grassfed sirloin totalled $8.65! I had some left over asparagus in the freezer, so we had a nice little dinner.

Prepping

One week down for Paleo - and I must say I feel great. I probably ate more fruit than I was suppossed to, but other than that no carbs or sugars for this girl!










I'm still trying to learn how to cook tasty meals, not just healthy ones...my sister has always made fun of me because I eat tasteless food. I'm perfectly content to eat veggies sauteed in nothing but a little water, no salt on my food - really pretty boring. But I'm learning...she has a grill so I've started bringing loads of meat over to grill and have on reserve for the week. Not the best photo, but I threw some Salmon, Rainbow Trout, and chicken/onion/pepper scewers on the grill, not too shabby! Then of course, one day for lunch I went to Whole Foods and got this, and David pointed out that I was not actually allowed legumes, so I had two egg white for lunch - still learning haha!
Eating out does prove to be a challenge, especially when you living in the land of chips and queso.


My parents live in East Texas...A drive that is long enough they would need to spend the night, but short enough that they make it once or twice a month, even more so that all of their kids live in Austin...now that Chels and I no longer share a house, we eat out, every meal.


For me, it's hard to just say I'll eat healthy, without having specific quidelines. Hopefully one day, but right now I like to have certain boundaries. We went out for dinner, and I realized the benefit of thinking just a little ahead. Usually I would blame a lack of time, but recently I've been making it more a priority to plan ahead for meals. I ate some fish and veggies before we left, and got a dinner salad with no dressing at the restaurant to much on while everyone else was eating.


A small accomplishment I know, but this was huge for me. We had a serious game of bowling that followed, and I had zero blood sugar spikes or drops, and no stomach aches. Weight loss is definetely a factor, but just feeling better - more energy and havn't gotten sick after a meal since I've started...maybe I am Lactose Intolerant or Gluten Sensitive, but I don't even care because I feel great now! So to go out on a fun note, here are a few pictures but our bowling family fun night...One of those unibrows looks way too real :)
